 Q -" What Butter should I use? What if I get home, and find out that I bought the wrong kind? "  

A - Clarified butter is what we want to use when coconut oil is not an appropriate choice for a patient's needs. If you bought salted, standard butter from the store, don't worry! You can make it salt free and clarified in a matter of hours with only a few moments of effort on your part.

Water wash and clarify your butter to remove the salt, then the excess water, by the time you're finished with that it will be in better condition for extracting than store-bought unsalted butter (which still has a water content and milk solids - the same clarification process should be used). This will save you a trip to the store if you wanted to get started right away.

The salt in store bought butter is carried primarily in the water content, as it's not very oil soluble. Store bought butter is made up of milkfat, and 5% - 20% water, plus milk solids that can burn at elevated temps once that water evaporates if they aren't removed.

As far as the salt goes, if you get home and discover you've bought the wrong kind - By adding and mixing additional water with the melted butter, then allowing the fats to separate and solidify, you can pour off all but small traces of salt, and those can be effectively removed by repeating that process one more time. Then just follow your favorite clarified butter recipe to remove the remainder of the milk solids and moisture.

Home made butters and clarified butters are fantastic additions to your arsenal, we make ours from local cream! If it's too much trouble though, most shops these days do carry ghee, and clarified butters.  "  Early Summer of 1999
